Development of bakery production requires stable functioning of enterprises. Sustainable development of bakery enterprises is constrained by the low level of capacity utilization, high share of expenses in the product cost, etc. These issues are largely associated with development of innovations that are used to solve the tasks set by producers of bakery products, namely improvement of products quality, enhancement of the product range, growth of financial independence and increase of enterprises competitiveness. However, the issues of arrangement and management of the innovative technologies introduction still remain insufficiently worked out, which underlines the relevance of the topic under consideration.
