Annotation:

The article examines the issues of analysis and increase of labor efficiency at the public catering establishments. Strengthening of competition at the catering market, increasing of the costs of enterprises predetermine the need to justify and implement the reducing of production costs and bringing it to consumers. One of the key problems of servicing is underlined, which is connected with insufficient preparedness of the personnel directly interacting with the end user. In connection with these, a more thorough analysis of the reasons why most of the staff does not show a high level of communication and other parameters that directly affect the customer’s satisfaction is required. The paper clarifies the content of the concept of labor efficiency, justifies the system of indicators for calculating labor efficiency taking into account the allocation of such components of labor efficiency as operational, economic and social efficiency. The specific features of the catering industry are highlighted, which must be taken into account in the analysis of labor efficiency; a classification of the factors influencing the efficiency of labor in the industry under consideration taking into account their content and the level of the influence environment of the factors is proposed. The analysis of the factors allows us to use a systematic approach to justification of increasing the efficiency of labor for public catering enterprises taking into account the format of institutions and their size. The results of the research are as follows: the content of the concept of labor efficiency is clarified through the study of its constituent elements, a system of indicators characterizing the efficiency of labor in the public catering industry is justified, and the ways for improving labor efficiency at the enterprises of this industry are determined.
